Emily's Party Part III 2012 (Ham Delights and Curry Chicken Salad)

Ham Delights

     This is one of my absolute FAVORITE sandwiches! A lady named Gay McLeod at our church first introduced them to me a couple of years ago, and several months ago I got the recipe from my good friend, Emilee. We've made these delights numerous times since, and the recipe is so easy!

 Ham Delights

Ingredients:
1 1/2 sticks butter, softened
1 tablespoon yellow mustard
1/2 tablespoon Worcestershire sauce
1 tablespoon poppy seeds
1/4 of a small onion, finely diced
sliced Deli Ham
sliced cheese of your choice (we like to use provolone)
1 bag of dinner rolls or 1 loaf of bread

Mix first 5 ingredients (butter, mustard, W. sauce, poppy seeds, and onion) until well combined.






Split rolls and spread the sauce on both the top and bottom of the inside of the roll. Place ham and cheese in the rolls and place on cookie sheet.

One of our friends, Julie, and myself spreading the sauce on the dinner rolls.

These just need some cheese!


Place in the oven at 250 degrees for about five minutes, or until bread is lightly toasted and cheese is melted. Serve immediately and enjoy!

Curry Chicken Salad
                                         
The first time I had these was several years ago at a Mother's Day luncheon.  The hostess was a former caterer who gave me the recipe.  Although we served the chicken salad on dinner rolls, they are the BEST on croissants from the deli!  The chicken salad is on the right.  These are pimento cheese sandwiches in the front.

Ingredients:

Several chicken breasts (I used about ten since it was for a party and I wanted leftovers)
red, seedless grapes
two yellow apples (mildly sweet and soft skin)
red curry powder
shelled and crushed pecans
a jar of mayo
salt
optional:  diced celery (I leave this out)
               croissants/dinner rolls 


Start prepping your ingredients:  boil chicken, cool, skin and remove bones, and chop.

Save your "chicken water" in the freezer for soup!

Find a couple of urchins to shell your pecans or buy some!

A large bowlful of white, chopped chicken

A new bottle of curry powder

Shake the curry in like crazy until it all looks speckled like this.

I used almost half the container for all this chicken.  Don't worry, it won't be that spicy!  It needs a lot.

Chop your fruit.

I cut the grapes in half.

It took an entire bunch for this large amount of chicken.

I diced my yellow (they look green here) apples.

Mix them in.

Get your pecans.

Crush them.

Mix.
I used over an entire jar of mayonnaise.  The chicken soaks it up like crazy.  I used about a jar and a half for this large batch.

So yummy.  It looks like ordinary chicken salad, but it has so much flavor from the curry and the fruit.  Taste and add salt as needed.

Emily and her friend Nikki construct the sandwiches a couple of hours before the party.

Remember that pimento cheese spread from the tea party?  We made sandwiches for the party with that too.  For your encouragement, I have posted pictures of my ten year old, Sammy, who made the entire thing by himself.  To see the recipe see our tea party post!
